MAIN DISH: KALLALOO - A STEW MADE WITH SEASONED PORK, SALT
MEAT, FRESH FISH, CRAB OR CONCH, OKRA, SPINACH, ONIONS AND
GARLIC, OTHERWISE KNOWN AS PEPPERPOT.
GOAT WATER - GOAT MEAT BOILED WITH BROWN FLOUR, ONIONS,
CLOVES, THYME, GARLIC AND CELERY.
SOUSE - BOILED PIGS HEAD, FEET, SNOUT OR EAR, WITH ONION,
CELERY, HOT PEPPERS AND LIME JUICES. CHICKENS ARE POPULAR
BOILED, BAKED, BARBECUED AND STEWED.

SEAFOOD: LOBSTER IS SERVED GRILLED OR IN A SOUPY RICE STEW
KNOWN AS ASOPOA; CONCH IS SERVED IN SALAD OR SAUTEED IN
GARLIC OIL AND HERBS. OTHER COMMON FISH ARE RED SNAPPER,
KINGFISH, BONITA, TUNA, DOLPHIN. JOHNNY CAKE IS USUALLY
SERVED WITH FISH AND IS SORT OF DUMPLING. THEY ARE BEST
EATEN HOT STRAIGHT OUT OF THE OVEN.

SIDE DISHES VEGETABLES: SWEET POTATOES, BREADFRUIT, OKRA,
SQUASH, TARO OR CASSAVA ROOT COOKED; DEEP FRIED FRUIT
FRITTERS ARE A SPECIALITY; DEEPFRIED BLACK EYED PEAS,
CHUTNEY, PICKLE MADE WITH FRESH MANGOS, PICKLED PAPAYA AND
LIME JELLY OR STEWED GUAVA MAY BE SERVED WITH YOUR MEAL.

FRUITS AND DESSERTS: FRESH FRUIT PIES AND CAKES ARE THE
BEST DESSERTS. ICE-CREAM IS NOT MADE VERY OFTEN WITH LOCAL
FRUITS.

RUM, THE MAIN ALCOHOLIC DRINK IS RUM SERVED WITH ICE, IN
PUNCH, DAIQUIRIS, FLIPS, SOURS AND FIZZES ALL TYPES OF RUM
COCKTAILS. PINA COLADA IS SERVED IN ANY BAR. WINE IS
IMPORTED FROM FRANCE AND ITALY BUT IS NOT THE BEST. BEERS
ARE ALSO IMPORTED FROM EUROPE AND AMERICA. ANOTHER NATIVE
DRINK IS MAUBI MADE FROM TREE BARK, GINGER, ROSEMARY, SWEET
MARJORAM, SUGAR AND PINEAPPLE SKIN. FRESH FRUIT JUICES ARE
WIDELY AVAILABLE.
