EGYPTIAN FOOD IS GREATLY INFLUENCED BY ITALIAN, TURKISH,
ENGLISH AND FRENCH CUISINE. LUNCH IS USUALLY SERVED FROM 1
TO 4 PM AND DINNER FROM 8 TO 10PM. DURING THE MONTH OF
RAMADAN THESE HOURS AND FOODS ARE LIKELY TO CHANGE.

TYPICAL MEALS

ENTREE: MOLOKHIA IS A LEAFY GREEN VEGETABLE, WHICH IS
COOKED IN A GARLIC BROTH, PEPPER AND CORIANDER SERVED WITH
RICE. OTHER COMMON HORS D'OEUVRES ARE FOOL, A SPICY BEAN
AND TOMATO MIXTURE, AND TURSHI OR MAKHALLA CONSISTING OF
SPICY PICKLED VEGETABLES.

MAIN MEAL: THE KEBAB IS VERY COMMON, WITH IT APPETIZING
CHUNKS OF LAMB MARINATED IN SPICES AND GRILLED OVER A
CHARCOAL FIRE. KOFTA IS A DISH OR MINCED SPICED LAMB AND
GRILLED ON A SKEWER. ANOTHER EGYPTIAN FAVOURITE IS GRILLED
PIGEON AND RICE.

FISH: FISH IS SERVED MOSTLY PAN OR DEEP FRIED WITH A PINCH
OF CUMIN. THE FAVOURITES ARE THE LARGE ALEXANDRIAN SHRIMPS
SKEWERED AND GRILLED ON A CHARCOAL FIRE.
SALADS: SALADS ARE BOTH SERVED BEFORE AND DURING THE MAIN
COURSE. THEY CONSIST MAINLY OF BEETROOT, TOMATOES AND
CUCUMBER. GREEN SALADS MAY CONTAIN A TART, ALMOST PEPPERY
GREEN LEAF CALLED GARGIR MIXED WITH LETTUCE.

CHEESE: THE EGYPTIAN CHEESE GIBNA COMES IN TWO VARIETIES:
GIBNA BEIDA, SIMILAR TO FETA, AND GIBNA RUMY, A SHARP, HARD,
PALE YELLOW CHEESE.

DESSERT: FRESH FRUITS, SUCH AS BANANAS, ORANGES, FIGS AND
GUAVAS ARE THE FAVOURITES. OMMU ALI IS A BAKED DESSERT
CONSISTING OF RICE, MILK, RAISINS AND COCONUT.

EGYPTIAN DESSERTS OF PASTRY OR PUDDINGS ARE USUALLY
DRENCHED IN HONEY SYRUP. EGYPTIAN RICE PUDDING IS CALLED
MAHALLABIYYA AND IS SERVED TOPPED WITH PISTACHIOS.

TYPICAL DRINKS

IT IS AGAINST THE MUSLIM RELIGION FOR THEM TO DRINK
ALCOHOLIC BEVERAGES, BECAUSE OF THIS SOFT DRINKS ARE VERY
POPULAR AND AVAILABLE EVERYWHERE. FRUIT JUICE AND LEMONADE
ARE ALSO AVAILABLE EVERYWHERE. THE EGYPTIAN SPECIALITY IS
KARKADEH, A DEEP RED INFUSION OF HIBISCUS PETALS, SERVED
CHILLED AND SWEETENED. MANY WINES ARE ALSO AVAILABLE IN
RED, WHITE AND ROSE. BEER IS IMPORTED FOR THE LARGER
HOTELS, BUT LOCAL BEER SUCH AS STELLA, IS QUITE GOOD AND
SERVES TWO PEOPLE & ASWANLI IS THE DARK BEER MADE IN ASWAN.
ZIBIB IS A LOCAL SPIRIT MADE FROM GRAPES OR DATES.
