IT IS NECESSARY TO REMOVE YOUR SHOES BEFORE STEPPING ON THE
MAT. YOU WILL BE OFFERED A WET TOWEL TO FRESHEN YOURSELF UP
BEFORE YOUR MEAL. RESTAURANTS ALWAYS USE CHOPSTICKS, BUT IF
YOU PREFER YOU MAY REQUEST A KNIFE AND FORK. WHEN HAVING A
SOUP IT IS NORMAL TO REMOVE THE FOOD WITH THE CHOPSTICKS
AND TO DRINK THE REST DIRECTLY FROM THE BOWL. SLURPING IS
EXPECTED. THERE ARE A LOT OF MODESTLY PRICED RESTAURANTS
THROUGHOUT THE COUNTRY.

TYPICAL MEALS

BREAKFAST: JAPANESE STYLE BREAKFASTS ARE LIKELY TO CONSIST
OF RAW, COLD FISH OR HOT, PICKLED SOUP, KNOWN AS MISO-
SHIRU. RICE AND TEA ARE ALSO SERVED.

LUNCH AND DINNER: BUCKWHEAT NOODLES, SOBA, WITH SHREDDED
BEEF, CHICKEN OR PORK, OR EGG WITH LEEKS AND MUSHROOMS IN A
BOWL OF FISH STOCK ARE THE MOST POPULAR LUNCHES.
COMMON MEALS ARE:
SASHIMI: RAW FISH, SLICED INTO BITE SIZE PIECES AND DIPPED
IN A SAUCE. THE MOST COMMON FISH USED ARE TUNA, BASS,
POMPONS AND SEA BREAM.
SUSHI: PATTIES OF COLD RICE MIXED WITH A SLIGHTLY DILUTED
VINEGAR AND TOPPED WITH RAW FISH. SUSHI MAY BE MADE WITH
THE FISH MENTIONED ABOVE OR WITH OTHERS SUCH AS OCTOPUS,
SQUID, CLAMS, PRAWN OR SHRIMP.
SUKIYAKI: THIS IS A BEEF, STIR FRIED DISH. MIXED IN WITH
VERMICELLI, SHREDDED LEEKS, SPINACH AND MUSHROOMS.
YAKITORI: BARBECUED CHICKEN, WITH ONIONS AND GREEN PEPPER
TAMPURA: THESE SHRIMP, PRAWN, GREEN PEPPER AND VEGETABLES
COATED IN A GOLDEN BATTER AND DEEP FRIED. RICE IS SERVED
SEPARATELY.

DESSERTS: WAGASHI - RICE FLOUR, MASHED RED BEANS, YAMS,
EGG, ARROWMEAT AND SUGAR.
MANJU - A BUN FILLED WITH A PASTE OF SWEET BEANS.
ICE-CREAM HAS NEVER REALLY CAUGHT ON THROUGHOUT JAPAN.

TYPICAL DRINKS

WHISKY IS DISTILLED LOCALLY AND IS BECOMING VERY POPULAR
WITH THE JAPANESE. BOTH DOMESTIC AND IMPORTED WINES ARE
ALSO SEREVED IN RESTAURANTS. SAKE, IS THE NATIONAL DRINK.
IT IS A COLOURLESS WINE,PRODUCED FROM RICE AND SHOULD
NORMALLY BE SERVED WARM. THE JAPANESE HAVE ALSO BREWED
A BEER, KNOWN AS BIRU WHICH IS NOT TOO BAD.
