SOUPS:
CALDO TLALPENO - A HOT SOUR SOUP, CONSISTING OF CHICKEN
PIECES, RICE AND SLICES OF AVOCADO.
POZOLE - THIS IS A THICK SOUP, CONTAINING CHUNKS OF PORK,
CHILLI, PEPPER, RADISHES, GARLIC AND A GIANT CORN KERNEL.
OTHER FAVOURITES ARE SEAFOOD, CHICKPEAS, LENTILS,
MEATBALLS, SQUASH, POTATOES, ASPERAGUS OR TORTILLAS.

FISH:
FISH IS USUALLY SERVED HALFWAY THROUGH THE MEAL. THESE FISH
DISHES ARE SOME OF THE MOST COMMON:
CAMARONES - GIANT SHRIMP, DEEP FRIED WITH GARLIC AND LITTLE
SHRIMP SAUTEED WITH ONION, OLIVES, TOMATO SAUCE, CAPERS AND
PARSLEY.
HUACHINANGO - RED SNAPPER, BAKED IN A WINE SAUCE, ALONG
WITH ONION, PEPPERS, GARLIC, HERBES, OLIVES AND TOMATO.
PATZCUARO - A WHITE LAKE FISH, COOKED IN A WINE AND SPICE
SAUCE.

MEAT:
THE MEAT COURSE IS SERVED AFTER THE FISH COURSE AND
CONSISTS MAINLY OF FOWL, BEEF OR PORK.
MOLE POBLANO - A HOT SAUCE WITH ONION, GARLIC, PEPPER,
ANIS, TOMATO, CORIANDER, CINNAMON, CLOVE, SEASAME SEED,
BITTER CHOCOLATE AND ABOUT 8 DIFFERENT CHILLIES.
CABRITO AL HORNO - ROAST KID-GOAT.
CARNE ENCHILADO - PEPPERED MEAT SERVED IN A HOT SAUCE.

DESSERTS:
FRUIT PIES AND CAKES ARE COMMON AND SOLD PRACTICALLY
EVERYWHERE. OTHER COMMON DESSERTS ARE FLAN, RICE PUDDING
AND FRESH FRUITS. MEXICAN ICE-CREAM IS DELICIOUS.

TYPICAL DRINKS

RUM, GIN, VODKA, SCOTCH, BOURBON ARE ALL EXPENSIVE IN
MEXICO. MEXICAN BEER IS QUITE CHEAP AND IS GOOD ENOUGH TO
BE EXPORTED. TEQUILA IS THE NATIONAL DRINK. THIS IS TAKEN
STRAIGHT, WITH A PINCH OF SALT AND A LIME. ANOTHER OF THEIR
FAVOURITES IS KAHLUA, A COFFEE LIQUEUR.
SOFT DRINKS, JUICES, MILK, TEA AND COFFEE ARE ALL READILY
AVAILABLE.
