IN LOTUS LEAVES AND COOKED FOR THE DAY ON HOT ASHES.

SHANDONG SPECIALITIES:- BIRDS NEST SOUP AND SWEET AND
SOUR YELLOW RIVER CARP.

SHANGHAINESE AND JIANGZHENESE:- CHARACTERISED BY THE
USE OF SEAFOOD. ALSO SPICIES. EELS ARE POPULAR.
SHANGHAINESE SPECIALITIES:- DRUNKEN CHICKEN. CHICKEN COOKED IN A
CHINESE WINE WHICH TASTES LIKE SHERRY.
JIANGZHENESE SPECIALITIES:- POULTRY AND SEAFOOD COOKED
IN ORIGINAL JUICES TO PRESERVE FLAVOUR.

SICHUANESE:- CHARACTERISED BY THE USE OF SPICIES, MORE THAN
THE PREVIOUS STYLES.
SPECIALITIES:- FROGS LEGS, SMOKED DUCK, SHRIMPS WITH SALT
AND GARLIC, DRIED CHILLI BEEF AND BEAR PAWS IN BROWN SAUCE.

CANTONESE:- CHARACTERISED BY STIR FRYING FOOD.
SPECIALITIES:- ABALONE, THOUSAND YEAR OLD EGGS, SHARKS FIN
SOUP, ROAST PIG AND DRAGONS DUEL TIGER, WHICH IS A MIXTURE

DRINKS

GREEN TEA IS THE MOST COMMON DRINK. THERE IS
ALSO A CHINESE BEER CALLED TSINGTAO. ONE OF THE
BEST-KNOWN NATIONAL DRINKS IS MAOTAI. LOCALLY
BREWED DRINKS ARE AVAILABLE. VERY FAMOUS TRENCH
WINE CALLED DINASTY. COFFEE AND BLACK TEA ARE
