FISH SAUCE, FIORENTINA VEAL IN SPINACH SAUCE AND OSSO BUCO IS

FISH

MOST FISH IS GRILLED, FRIED OR STEAMED. SPECIALITIES ARE SEA
BASS, RED MULLET, ANGLER FISH AND SWORDFISH.

VEGETABLES

MUSHROOMS ARE POPULAR AND OFTEN SERVED STUFFED WITH BACON,
GARLIC AND PARSLEY AND COVERED WITH CHEESE. PEPPERS,
TOMATOES, AUBERGINES AND BABY ONIONS ARE ALSO COMMON.

CHEESE
OF COURSE ITALY'S MOST FAMOUS CHEESE IS THE PARMESAN. THE
ITALIANS OFTEN EAT THIS SEPARATELY AND NOT JUST GRATED OVER
PASTA DISHES OR SOUP. GORGONZOLA AND PROVOLONE ARE ALSO
COMMON. PROVOLONE OTHERWISE KNOWN AS BUFFALO CHEESE. OTHERS

DESSERT

GELATI, IN OUR LANGUAGE ICE-CREAM IS A MUST AND NOT JUST ANY

RED WINE IS GREATLY APPRECIATED IN ITALY, ESPECIALLY IN THE
REGIONS OF FLORENCE, SIENNA AND TUSCANY. A GOOD CHIANTI
WHITE WINE IS TREBBIANO. CAMPARI AND PUNT E MES ARE COMMON
APERITIFS. AN ANIS-FLAVOURED DRINK CALLED SAMBUCA WITH A
COFFEE BEAN FLOATING IN IT IS A MUST.
